Virginia - Peanut Pie


Virginia peanuts are not only peanuts grown in the state of Virginia, but they are a specific variety of the nut.  Virginia peanuts are larger seeded and have grown in popularity over the last few years. 



While these guys are great to snack on as is, they are even better in a Peanut Pie!  Think pecan pie but with peanuts and a lighter (in color) filling!  


The Virginia Diner in Wakefield, VA is famous for their Peanut Pie and they happen to sell their own line of Virginia peanuts. 




This pie is really simple to make too! 




ingredients
3 eggs
1 cup sugar
1/2 cup flour
1 1/2 cups light corn syrup
19 grams unsalted butter, melted
1/2 pound of salted Virginia peanuts
1 pie crust 


recipe

  • Whisk eggs together in medium sized bowl
  • mix sugar and flour together then add to eggs
  • add in corn syrup, peanuts then melted butter and stir together until well mixed
  • pour into pie crust 
  • bake at 350 degrees for 45 - 60 minutes or until center is set 


This is a really great pie and a nice change from pecan pie!

  3. Hi--I'd like to try this, but I'm concerned about the "19 grams of butter" part. How does this convert to American measurements (tablespoons)?
